Description
For this recipe, you’ll need two pie crust pastries for a 9-inch pie. With the help of my friend Lovella, we’ve created an easy and detailed tutorial for how to make a pie crust. Alternatively, you can purchase Krause Farm’s premade pie crust. They come two rounds to a package.
Ingredients
2 9-inch pie crusts (bottom and top) – use our pie crust recipe!
6 cups combination of blueberries, blackberries, raspberries, and cherries
1/3 cup sugar
1/4 cup cornstarch
2 tablespoons fresh lemon juice
1/4 teaspoon ground cinnamon
All-purpose flour (for rolling the pie crust)
1 tablespoon chilled unsalted butter, cut into small pieces
1 egg, lightly beaten
Coarse sugar, for sprinkling (optional)
Ice Cream, for serving (optional)
Instructions
Preheat the oven to 425 degrees F. Line a pie dish with the bottom crust.
In a large bowl, combine the fruit, sugar, cornstarch, lemon juice, and cinnamon, tossing to coast the fruit completely. Add the berry mixture to the pie dish.
Lay the top crust on a floured surface. Using a sharp knife, slice the dough into 7 strips of even width. Make the lattice top: Lay 3 dough strips across the pie in the same direction. Peel back the middle strip almost all the way to the left. Lay down 1 stip, top to bottom, along the left side of the pie, perpendicular to other strips, then place the middle strip back on top of it. Repeat with the right side, then one more time all the way to the left and all the way to the right.
Pinch all dough strips to the edge, pulling up the overhang if there is any, and, using a fork, crimp the circumference of the pie. Tuck the pieces of butter into the exposed filling. Brush the lattice top with beaten egg and sprinkle with coarse sugar (if using).
Bake at 425 degrees F for 15 minutes. Turn down the hear to 350 degrees F and bake for another 45 minutes, or until the crust is golden brown and the filling is bubbly. Serve Warm with ice cream.
Notes
It’s not a bad idea to place a baking sheet on the rack below the pie, just in case it does spill over.
You can use any combination of berries & cherries you want, however for the photo we did cherry and blackberry.
