Leftover Turkey Shepherds Pie


Description

Thanks to my friend Sharon for the inspiration for this dish. Don’t read any further if you’re one who uses a divided plate for your meals because you hate when the food groups touch each other. This dish is a glorious mash-up of turkey dinner leftovers, all layered in your favorite casserole dish. Ideally you’ve got just enough leftover gravy to drizzle the dish with one last ladle of rich, brown deliciousness once it’s on your plate. There’s no set recipe amounts, just use whatever tasty bits are left over from the holiday feast. You’ll need to plan ahead to have extra mashed potatoes to top this dish.

Here’s how I made it:

I greased my favorite deep-dish baking pan with butter.  

Then I layered it in this order:

  1. Cooked turkey meat, cut into bite-sized pieces.
  2. A drizzle of gravy (you may want to heat it up just a bit so it pours easily).
  3. Chopped up leftover, cooked veggies. Any combo is great but corn, peas and carrots are my favorites. Can also use frozen or canned veggies.  
  4. A layer of stuffing.
  5. Dollops of cranberry sauce.
  6. Another drizzle of gravy.
  7. Layer of mashed potatoes.
  8. Sprinkle of paprika and/or chopped parsley.

Bake uncovered for 30-45 minutes in a preheated 350 degree oven. 

Heat any leftover gravy and pass around the table. Enjoy listening to the groans of satisfied eaters
