Chocolate Sandwich Cookies

From the splattered pages of my 1983 copy of MEI’s Cookery Carousel, with credit to Nora Martens, is the recipe exactly as I’ve made it for the last 30 years!

Chocolate Sandwich Cookies
½ cup soft butter
1 cup sugar
1 egg
1 tsp. vanilla
1 cup milk
2 cups flour
½ tsp. baking powder
1 ½ tsp. baking soda
½ tsp. salt
½ cup cocoa

Mix ingredients in order mentioned, beating till smooth.  Drop, by rounded teaspoons onto greased cookie sheet.  Bake at 400 degrees for 7 minutes.  Cool.

Filling
½ cup shortening (white, not butter flavoured)
2 cups icing sugar
1 – 198 gram jar marshmallow creme (found in the baking section of the grocery store)
1 tsp. vanilla
3-4 tbsp. milk

Cream shortening and sugar together, beat in other ingredients.  Spread between cookies and make sandwiches.
